  • 1 cup chopped fresh/frozen mango
  • 4 tbsp white grape juice divided
  • 1 cup greek yogurt
  • 4 tbsp honey divided

Instructions

  • Make the raspberry purée by blending together raspberries, 1 tablespoon of white grape juice, and 2 tablespoons of honey. Set aside.
  • Make the mango purée by blending together mango and 1 tablespoon of white grape juice. Set aside.
  • Mix together the yogurt and 2 tablespoons of honey in a small bowl. Set aside.
  • Use a teaspoon to fill the espresso cups about 1/3 of the way with fruit purée, then 1/3 of the way with yogurt, and then top with fruit purée.
  • Insert the popsicle sticks and freeze for at least 6 hours (preferably overnight).
  • To serve, just tear off the espresso cup.

Notes

The teaspoon makes it easy (not messy) to fill the small espresso cups.
If you would like the yogurt to be more sweet than you can add more honey, 1 tbsp at a time.
