Vegan Black Bean Brownies

These Vegan Black Bean Brownies are fudgy, luxurious, and sweet. They only require a handful of simple ingredients that you might already have on hand, a food processor (or blender), and a sheet pan.

Ingredients

  • 1 can of black beans rinsed and drained
  • ¼ cup of cocoa powder
  • 1 ripped banana
  • ½ cup maple syrup
  • ¼ tsp sea salt
  • ¼ cup of coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ cup dark chocolate chips
  • 1 cup walnuts
  • ½ cup gluten-free flour

Instructions

  • Preheat oven to 350 F.
  • Combine all ingredients except chocolate chips and walnuts in a good food processor, and blend until completely smooth.
  • Stir in walnuts and and chocolate chips.
  • Line a sheet pan with baking paper. Pour and extend the batter. Optional: sprinkle extra chocolate chips over the top. 
  • Cook the black bean brownies for 20 minutes, then let cool at least 10 minutes before serving.
