Coconut Lime Rice Recipe

Ingredients

  • 1 cup  long grain white rice
  • 1 cup unsweetened full fat coconut milk
  • 1.5 cups water
  • 1 tsp kosher salt
  • 1 lime juiced
  • 1/2 cup cilantro chopped

Instructions

  • Rinse rice under cold water until the water runs clear.
  • Add the first 4 ingredients to the skillet. Bring to a boil over medium heat. Cover and reduce heat to low.
  • Cook for 12-15 minutes until most of the liquid is absorbed.
  • Remove from heat and keep covered for 10 minutes.
  • Fluff with fork and add lime juice and cilantro.
