Starbucks Bacon Gruyere Egg Bites (Copycat Recipe)

These Starbucks Bacon Gruyere Egg Bites are the perfect grab-and-go breakfast. Packed with protein from the eggs, cottage cheese, and bacon, these bites may just be the perfect breakfast.

Equipment

  • Instant pot
  • Silicone egg bites mold
  • Blender

Ingredients

  • 3 slices bacon cooked and chopped into small pieces
  • 5 eggs large
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ¼ cup cream cheese ⅓ less fat
  • 1 tbsp cottage cheese
  • 2 oz Gruyere cheese
  • cooking spray

Instructions

  • In a blender, process the eggs, salt, pepper, cream cheese, cottage cheese, and gruyere cheese.
  • Lightly spray the silicone egg mould with cooking spray.
  • Distribute the chopped bacon pieces to the bottom of each silicone mould.
  • Take the egg mixture (after blended) and disperse among each mould pouring over the bacon pieces. Make sure you do not over fill so that you can place the lid of the moulds without making a mess.
  • In the instant pot, pour one cup of water. Place the trivet into the Instant Pot.
  • Put the silicone lid on the silicone mould.
  • Place the mould in the Instant Pot on the trivet inside.
  • Close the instant pot by placing the lid on the pot and twist the lid to secure. Close the valve.
  • Using the steam setting, set the timer to 8 minutes.
  • When the Instant Pot has finished, open the valve to release the pressure.
  • Using the trivet, pull the mould out of the Instant Pot. Keeping the egg bites in the mould, place the silicone mould on a wired cooling rack.
  • Let them stay in the moulds before removing for about 5 minutes. They will continue to cook as well as cool.
  • You can use more than one mould without changing the high pressure or time on the instant pot.

Notes

  • Cook the bacon until it's crispy but not burnt. You want it to retain a bit of crunch even after being cooked with the eggs.
  • Be sure to let the egg bites cool for a few minutes before removing them from the mold. They're easier to handle and hold their shape better when slightly cooled.
  • Be sure to use the lid that your silicone egg bites mold came with. It's designed to create a seal, keeping the steam in and preventing any condensation from dripping into the egg mixture.
