Sheet Pan Chicken Fajitas with Avocado Crema

Quick and easy family friendly recipe! Chicken, bell peppers and onions are tossed with a delicious marinade to get this dinner on the table in no time!

Ingredients

Chicken Fajitas

  • 1 lb chicken breasts sliced thinly
  • 3 bell peppers - mixed colors sliced thinly
  • 1 small onion sliced thinly
  • 3 tbsp olive oil
  • 1/2 lime juiced
  • 1/2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 3/4 tsp salt

Avocado Crema

  • 1/2 avocado
  • 1/8 cup coconut cream
  • 1 tbsp fresh lime juice
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 tsp garlic powder
  • 1 tbsp avocado oil

Instructions

  • Preheat oven to 425 and line a baking sheet with foil or parchment paper.
  • In a small bowl mix together the olive oil, cumin, garlic powder, chili powder, salt, and juice of half a lime. 
  • Toss the marinade with chicken, onion, and peppers on prepared baking sheet until evenly coated. 
  • Bake in preheated oven for 20 minutes - tossing halfway through. 

Avocado Crema

  • While the fajitas are cooking making the avocado crema. 
  • Add 1/2 avocado, coconut cream, lime juice, avocado oil, salt, pepper, and garlic powder to a blender or food processor. Blend until smooth.
