Chicken Fajitas
- 1 lb chicken breasts sliced thinly
- 3 bell peppers - mixed colors sliced thinly
- 1 small onion sliced thinly
- 3 tbsp olive oil
- 1/2 lime juiced
- 1/2 tsp cumin
- 1 tsp garlic powder
- 1 tsp chili powder
- 3/4 tsp salt
Avocado Crema
- 1/2 avocado
- 1/8 cup coconut cream
- 1 tbsp fresh lime juice
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 tsp garlic powder
- 1 tbsp avocado oil
Preheat oven to 425 and line a baking sheet with foil or parchment paper.
In a small bowl mix together the olive oil, cumin, garlic powder, chili powder, salt, and juice of half a lime.
Toss the marinade with chicken, onion, and peppers on prepared baking sheet until evenly coated.
Bake in preheated oven for 20 minutes - tossing halfway through.
Avocado Crema
While the fajitas are cooking making the avocado crema.
Add 1/2 avocado, coconut cream, lime juice, avocado oil, salt, pepper, and garlic powder to a blender or food processor. Blend until smooth.
