These Healthy Ice Cream Sandwiches are made with greek yogurt, Truwhip, strawberries, vanilla extract, honey, and graham crackers.  The perfect summer treat. 

Add yogurt, diced strawberries, vanilla extract, and honey in a medium bowl. Mix well.

Fold in whipped topping until mixed well. Set it aside.

Place half of the graham crackers on the bottom of a lined dish. Spread yogurt mixture evenly over graham crackers.

Freeze for 4 to 6 hours. Remove from the freezer and cut into squares.
