Let’s reimagine our beloved traditional ice cream sandwich, but with a “macro-friendly” spin. We’ll swap out the high-sugar ice cream with a deliciously creamy blend of Greek yogurt, Truwhip, fresh strawberries, a dash of vanilla extract, and just a smidge of honey (no added sugar).

We’ll hold it all together not with sugary cookies, but with crisp graham crackers. The result? A masterpiece of flavor and nutrition!

So, it’s all the fun and flavor of a classic ice cream sandwich but lightened up and loaded with goodness. And the best part? No ice cream maker needed for the best ice cream sandwiches ever.

Ingredient Notes

Greek Yogurt: Make sure to use plain Greek yogurt. It’s higher in protein than regular yogurt and has a thicker consistency which will help give your ice cream filling the right texture. I like using either the Fage or Chobani brand.

Truwhip: This is a healthier alternative to traditional whipped topping, made without hydrogenated oils or high-fructose corn syrup. If you can’t find Truwhip, you could use another brand of whipped topping (such as Cool Whip), but keep in mind this might change the nutritional profile. I get my Truwhip at Walmart in the freezer section.

Strawberries: You can use fresh or frozen strawberries for this recipe. Be sure to cut them into small pieces.

Recipe Tips

Tip 1: Feel free to adjust the sweetness of the ice cream mixture to your liking. If you prefer a sweeter flavor, you can add more honey or your preferred sweetener. Taste the mixture as you go and gradually add additional sweetener until it reaches your desired level of sweetness.

Keep in mind that the sweetness may vary depending on the ripeness of the strawberries and personal preference, so don’t be afraid to customize it to suit your sweet tooth!

Tip 2: Be sure to thaw the whipped topping prior to making the recipe.

Tip 3: . Let the ice cream sandwiches sit for a few minutes at room temperature to soften slightly before serving

How To Store

Wrap Each Sandwich: Once the sandwiches are assembled, wrap each one individually in plastic wrap or wax paper. This not only helps maintain their shape but also prevents freezer burn.

Use an Airtight Container: Place the wrapped sandwiches into an air-tight container. This extra layer of protection will further prevent any potential freezer burn and stop the sandwiches from absorbing any other flavors present in the freezer.

Freeze: Store the container in the freezer. These Strawberry Ice Cream Sandwiches will stay fresh for up to 2 weeks.

Serving: When you’re ready to enjoy a sandwich, take it out of the freezer and let it sit at room temperature for a few minutes before eating. The softened ice cream will make the sandwich easier to bite into.

Additions, Substitutions, and Variations

SUBSTITUTIONS
Greek Yogurt: If you’re dairy-free, some dairy-free options are almond or coconut yogurt.

Truwhip: You could use another type of whipped topping such as Cool Whip or Cocowhip.

Honey: You can replace the honey with your choice of sweetener such as maple syrup or agave, or even a sugar free sweetener such as Swerve or Stevia.

ADDITIONS
Chocolate Chips: If you’re a chocolate lover, try adding mini chocolate chips to the ice cream mixture for extra flavor.

Protein Powder: To increase the protein content, consider adding a scoop of your favorite protein powder to the ice cream mixture.

Nut Butter: Try adding 1-2 tablespoons of your favorite nut butter into the ice cream mixture. Almond, cashew, or peanut butter could add a yummy depth of flavor and a creamy texture. Remember, it may increase the calorie content, so adjust according to your dietary needs.

Cocoa Powder: Try adding a tablespoon of unsweetened cocoa powder into the ice cream mixture for chocolate “ice cream”.

VARIATIONS
Switch Up the Base: Get creative with the base of your ice cream sandwiches by trying different options instead of graham crackers. Experiment with using other cookies, such as chocolate wafer cookies, oatmeal cookies, or even homemade shortbread for a unique twist on the classic ice cream sandwich experience.

Dip in Melted Chocolate: Take your Healthy Ice Cream Sandwiches to the next level by dipping them in melted chocolate. Once assembled, let the sandwiches firm up in the freezer, then dip them halfway into melted dark, milk, or white chocolate. Allow the chocolate to set before enjoying a decadent, chocolate-coated treat. Yum!

Roll in Ice Cream Toppings: Add a fun and flavorful twist to your ice cream sandwiches by rolling the sides in a variety of delicious toppings. After assembling the sandwiches, roll the exposed edges into crushed nuts, sprinkles, shredded coconut, mini chocolate chips, or even crushed cookies

Flavor Variations

Try some different fruit and extract combinations that can take these Low Calorie Ice Cream Sandwiches to a new level.

Lemon and Raspberry: Lemon and raspberry is one of my favorite flavor combinations. Lemon extract can give a bright, tangy flavor which balances the sweetness of raspberries perfectly.

Coconut and Mango/Pineapple: Using coconut extract will add a tropical twist to your sandwiches. Pair this with diced mango or pineapple for a refreshing, beachy treat.

Orange and Blueberry: Fresh or frozen blueberries can work well with a few drops of orange extract, creating a delightful contrast between the citrus and berry flavors.

Almond and Cherry: Almond extract has a rich, warm flavor that pairs beautifully with sweet, tart cherries. Make sure to pit and chop the cherries into small pieces.

⚖️ Macro Balance Breakdown

Protein: Greek yogurt is a fantastic source of protein. If you’re counting macros, you’ll appreciate the protein boost that Greek yogurt offers. Plus, you can amp up the protein content even further by adding a scoop of your preferred protein powder.

Carbohydrates: This recipe uses fresh strawberries and honey (optional) for a touch of natural sweetness, providing healthier carbohydrates than those found in traditional, sugar-laden desserts. The graham crackers add a wholesome source of carbs as well, especially if you opt for a whole grain variety.

Fats: While traditional ice cream sandwiches can be high in unhealthy fats, my more nutrient-dense version keeps the fat content in check. The addition of a moderate amount of Truwhip, a healthier whipped topping, helps control the fat content while ensuring the ice cream filling stays delightfully creamy.

Common Questions

These sandwiches can be stored in the freezer, individually wrapped and in an airtight container, for up to 2 weeks. Allow them to soften at room temperature for a few minutes before serving for the best texture.

While Greek yogurt is thicker and higher in protein, you can certainly use regular yogurt or a plant-based yogurt. However, the texture of the ice cream filling might be less thick

Absolutely! Feel free to use your favorite fruits. Blueberries, peaches, cherries, or a mix of tropical fruits would all work well.

The term “healthy” can often be subjective, varying based on individual dietary needs and health goals. Traditional ice cream sandwiches, typically high in sugar and fat, aren’t usually considered a health food. However, this recipe for Healthy Ice Cream Sandwiches offers a more nutritious alternative by using ingredients like high-protein Greek yogurt, fresh strawberries, a healthier whipped topping, and optionally, honey as a natural sweetener.
