Servings: 6 cups
- 1 1/2 cups rolled oats
- 1 banana ripe
- 1/4 cup raw honey
- 1 cup yogurt of your choice
- strawberries for serving
- blueberries for serving
In a medium bowl, mash the banana until smooth.
Add the oats and honey to the mashed banana and mix until well combined.
Divide the mixture evenly among 6 cups of a greased muffin pan. Press it firmly into the bottom and up the sides of each cup to form a cup shape.
Freeze the muffin tray for 30 minutes.
Preheat the oven to 350°F and bake the cups for 30 minutes.
Remove from the oven and let cool in the pan for 10 minutes before gently removing the cups.
Fill each cup with yogurt and top with strawberries and blueberries. Serve immediately.
Store unfilled cups in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
Once filled with yogurt and berries, eat right away — they don't hold well once assembled.
These freeze well before filling: freeze baked, cooled cups in a single layer, then thaw at room temperature before topping.
Pat frozen berries dry if using them in place of fresh, to keep the cups from getting watery.
