No-bake oat flour energy balls with hemp seeds, honey, rice crisps, butterscotch chips, and sprinkles for an easy after-school snack.

- 2 cups oat flour
- 4 tablespoons hemp seeds
- 1/3 cup honey plus more if needed
- 2 tablespoons butter melted
- 1/2 teaspoon salt
- 1/3 cup butterscotch chips
- 2 tablespoons sprinkles
- 1 1/2 cups rice crisps
In a large bowl, stir together the oat flour, hemp seeds, salt, butterscotch chips, sprinkles, and rice crisps until evenly combined.
Add the honey and melted butter, then mix until the dough comes together with no dry patches remaining. If it seems too crumbly, mix in an extra teaspoon of honey at a time.
Scoop the mixture and roll it between your palms into balls about 1 to 1 1/2 inches wide. You should end up with 12 to 14 total.
Arrange the balls on a plate or small tray and refrigerate for 20 to 30 minutes, until firm.
Store in the fridge in an airtight container for up to 1 week.
These freeze well for up to 1 month. Let them sit at room temperature for a few minutes before eating.
Swap in chocolate chips, raisins, dried fruit, or chopped nuts in place of the butterscotch chips.
These soften quickly at room temperature, so keep them chilled until ready to serve, especially in warm weather.
