Air Fryer Greek Chicken Bowls

These air fryer Greek chicken bowls combines juicy marinated chicken with crisp vegetables, salty olives, creamy feta, and a simple lemon dressing for a fresh, satisfying meal. The yogurt-marinated chicken stays flavorful and tender while the air fryer keeps prep easy and cleanup minimal.

Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts
  • ½ cup plain Greek yogurt
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp salt

For the Salad:

  • 2 medium tomatoes chopped
  • 1 cup cucumber chopped
  • 1 yellow bell pepper chopped
  • ½ red onion thinly sliced
  • ½ cup kalamata olives
  • ½ cup feta cheese

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  • To prepare the chicken, mix the Greek yogurt, garlic, smoked paprika, oregano, and salt in a bowl. Thoroughly coat the chicken breasts in the mixture, then cover and let them marinate for 30 minutes or longer.
  • Transfer the chicken to your air fryer. Air fry at 360°F (180°C) for approximately 18 minutes, making sure to flip the pieces over at the nine-minute mark so they cook evenly and turn golden brown.
  • While the chicken cooks, assemble the salad base by mixing the cucumber, tomatoes, bell pepper, red onion, and olives in a large container.
  • Prepare the vinaigrette by whisking lemon juice, olive oil, oregano, salt, and pepper in a small dish.
  • Drizzle the vinaigrette over the salad and toss well.
  • Allow the cooked chicken to rest for 5 minutes before slicing it.
  • Place the chicken slices over the salad, garnish with crumbled feta, and serve immediately.

Notes

  • For a more tender result  marinate your chicken in the refrigerator overnight.
  • To maintain maximum juiciness, always let the meat rest for 5 minutes post-air frying.
  • To prevent the vegetables from softening, only add the dressing right before you are ready to eat.
  • Feel free to customize your bowl by adding avocado for texture or substituting kalamata olives with green olives.
  • Store any leftover chicken and salad in separate containers in the fridge; they will stay fresh for up to 2 days.
