Baked Cheesy Chicken Taquitos

Loaded with shredded chicken, cheddar, and cream cheese, these baked taquitos are a crowd-pleasing meal or appetizer.

Ingredients

  • 2 cups shredded chicken cooked and
  • 10 to 12 corn tortillas Note: Flour tortillas can be substituted
  • ½ cup cheddar cheese shredded
  • 4 oz cream cheese softened
  • 2 tbsp sour cream use greek yogurt for lighter option
  • ¼ cup salsa
  • 2 tbsp vegetable oil for brushing
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  • Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  • Microwave the corn tortillas for 20 to 30 seconds to make them flexible and easy to roll. Meanwhile, in a large mixing bowl, beat the softened cream cheese until smooth, then stir in the sour cream, salsa, salt, pepper, garlic powder, cumin, and onion powder until the mixture is well combined.
  • Fold in the shredded chicken and cheddar cheese, mixing thoroughly to ensure even distribution.
  • Spoon approximately 2 to 3 tablespoons of the chicken mixture onto the lower third of each warm tortilla. Roll the tortilla up tightly.
  • Arrange the rolled taquitos seam-side down on the prepared baking sheet. Lightly brush the tops of the taquitos with vegetable oil.
  • Bake for 12 to 15 minutes, or until they are golden brown and have a crispy texture.
  • Enjoy hot with your favorite dipping sauces or toppings.
