Easy One-Pot Cajun Sausage and Rice Casserole

- 2 cups cooked long-grain white rice
- 4 cooked chicken sausages sliced
- 1 yellow bell pepper diced
- 1 yellow onion diced
- 1 14 oz can diced tomatoes do not drain
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 3 tablespoons green onion chopped, for garnish
Heat the olive oil in a large skillet or Dutch oven over medium heat.
Add the sliced sausage and cook for about 5 minutes, until browned on each side. Remove and set aside.
In the same skillet, add the diced onion and bell pepper. Sauté for about 5 minutes, until the onion turns translucent and the pepper softens.
Return the sausage to the skillet and add the rice, diced tomatoes, Cajun seasoning, salt, and pepper. Stir well until everything is evenly coated.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 5 minutes.
Remove from heat, sprinkle with the chopped green onion, and serve hot.
Store leftovers in an airtight container in the fridge for up to 3 days.
This casserole freezes well — cool completely, then freeze in an airtight container for up to 2 months.
Reheat on the stove or in the microwave, adding a splash of broth if it looks dry.
Serve with a green salad or crusty bread to round out the meal.
