- 1 lb lean ground beef
- 2 tablespoons taco seasoning
- 1 tablespoon ranch seasoning or dressing mix
- 1/4 cup water
- 24 mini tortilla scoop chips like Tostitos Scoops
- 1 cup shredded cheddar or Mexican blend cheese
- 1 small tomato diced
- 2 tablespoons chopped fresh cilantro
Suggested Sides/Toppings:
In a large skillet over medium heat, cook the ground beef until it is fully browned. Be sure to drain off any accumulated grease.
Stir the taco seasoning, ranch seasoning, and water into the cooked beef. Continue to simmer for 2 to 3 minutes, stirring occasionally, until the meat mixture has thickened.
Preheat your oven to 350°F (175°C). Arrange the tortilla scoop chips on a baking sheet. Spoon a portion of the seasoned beef into each chip, followed by diced tomatoes and a generous sprinkle of shredded cheese.
Bake for 5 to 7 minutes, or until the cheese is melted and begins to bubble.
Garnish the bites with chopped cilantro. Serve warm with sour cream, guacamole, or salsa on the side for dipping.
