Sloppy Joe Sweet Potato Bowls

Ingredients

  • 2 medium sweet potatoes cut into 1” pieces
  • ½ lb ground beef
  • 1 ½ cups coleslaw prepared or store-bought
  • ¼ cup pickles
  • ¼ cup pickled red onion
  • ½ medium white onion chopped
  • 3 tbsp olive oil divided
  • 15 oz tomato sauce
  • 2 tbsp mustard
  • ¼ cup ketchup
  • cup BBQ sauce
  • 1 tsp salt divided
  • Fresh cilantro for garnish

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper, then toss the sweet potato pieces with 2 tablespoons of olive oil and ½ teaspoon salt. Spread them in a single layer and roast for 30 minutes, or until fork-tender.
  • While the sweet potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chopped white onion and cook for about 5 minutes, until translucent. Stir in the ground beef and cook for 7–10 minutes, until browned, then drain any excess grease.
  • Stir in the tomato sauce, BBQ sauce, ketchup, mustard, and remaining ½ teaspoon salt. Bring to a simmer, then reduce heat to medium-low. Let the mixture simmer for about 10 minutes, stirring occasionally, until thickened.
  • Divide roasted sweet potatoes and coleslaw between two bowls. Spoon the sloppy joe mixture on top. Add pickles, pickled red onion, and a sprinkle of fresh cilantro.
  • Serve and enjoy!
