Big Mac Casserole

If you’re looking for an easy dinner, look no further than this Big Mac casserole. The easy dinner has all of the classic sandwich flavors you love with a fun twist and without the carbs. The easy casserole is made with ground beef, lettuce, tomatoes, pickles, cheese, seasonings, and a homemade copycat Big Mac sauce.

Ingredients

  • 1 lb ground beef lean 96/4 suggested
  • 1 lb white potatoes or russet potatoes, chopped
  • 1/4 cup yellow onion, diced (plus extra for topping)
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp ground mustard
  • 1 1/2 c cheddar cheese, shredded
  • 1/4 c water (for cooking potatoes)
  • Salt and pepper to taste

Big Mac Sauce

  • 1/2 c Greek nonfat yogurt, plain
  • 2 tbsp ketchup
  • 1 tsp Dijon mustard
  • 1 tsp minced dried onion
  • 3 tbsp dill pickle relish
  • 1/4 tsp garlic powder
  • 1/4 tsp salt

Toppings

  • sliced pickles
  • chopped lettuce
  • chopped tomatoes

Instructions

  • Preheat the oven to 375°F
  • In a large saucepan, bring water to a boil. Add chopped potatoes and simmer until soft, about 5-10 minutes. Optionally, season with salt and pepper for added flavor.
  • In a pan over medium-high heat, cook the ground meat and diced onions until the meat is no longer pink. Season with paprika, garlic powder, onion powder, yellow mustard, salt, and pepper.
  • Combine the potatoes and meat mixture in a 9x13 inch baking dish. Top evenly with shredded cheese. Cover with foil and bake for 15 minutes, then remove foil and bake for an additional 10 minutes for a crispy cheese top. Optionally, broil for 5 minutes for extra crispiness.
  • While the casserole bakes, mix together all ingredients for the Big Mac sauce.
  • Once baked, top the casserole with Big Mac sauce, shredded lettuce, chopped tomatoes,  and pickle chips.

Notes

You can substitute the ground beef for ground turkey. Keep in mind though that this will change the flavor of the casserole a bit.
Instead of relish, you can use finely diced pickles.
