Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
Toss sweet potato cubes with 1 tablespoon oil and a pinch of salt.
Spread on the baking sheet and roast for 10 minutes.
Mix paprika, garlic powder, onion powder, and black pepper.
Rub mixture all over the chicken breast and drizzle with remaining 1 tablespoon oil.
After sweet potatoes have baked for 10 minutes, add the seasoned chicken to the pan.
Roast for 20–25 minutes, or until sweet potatoes are tender and chicken reaches 165°F internally.
While the chicken roasts, dice tomatoes and avocado.
Slice chicken.
Build bowls with roasted sweet potatoes, cherry tomatoes, avocado, and sliced chicken.
