Ingredients

  • 1 boneless skinless chicken breast
  • 1 medium sweet potato peeled and cubed
  • 1 cup cherry tomatoes halved
  • ½ avocado diced
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • 2 tablespoons oil divided
  • Salt to taste

Instructions

  • Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
  • Toss sweet potato cubes with 1 tablespoon oil and a pinch of salt.
  • Spread on the baking sheet and roast for 10 minutes.
  • Mix paprika, garlic powder, onion powder, and black pepper.
  • Rub mixture all over the chicken breast and drizzle with remaining 1 tablespoon oil.
  • After sweet potatoes have baked for 10 minutes, add the seasoned chicken to the pan.
  • Roast for 20–25 minutes, or until sweet potatoes are tender and chicken reaches 165°F internally.
  • While the chicken roasts, dice tomatoes and avocado.
  • Slice chicken.
  • Build bowls with roasted sweet potatoes, cherry tomatoes, avocado, and sliced chicken.
