Ingredients

Blackened Chicken Ingredients:

  • 2 boneless and skinless chicken breasts halved horizontally for 4 cutlets
  • ½ tsp paprika
  • ½ tsp cayenne
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 tbsp olive oil

Sandwich Ingredients:

  • Blackened chicken from above
  • 8 slices Texas toast
  • 4 slices fully cooked bacon
  • 4 slices Swiss cheese
  • 1 large tomato
  • Romaine or iceberg lettuce leaves
  • 2 tbsp salted butter
  • 1/4 cup cup light mayonnaise
  • 1/2 tsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  • Combine paprika, cayenne, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
  • Rub the seasoning mix onto both sides of the chicken cutlets.
  • Heat olive oil in a cast iron skillet or griddle over medium-high heat.
  • Add the chicken and cook for 5–7 minutes per side, or until fully cooked. Cook in batches if necessary.
  • Rest the chicken for a few minutes, then slice.
  • Whisk mayonnaise, lemon juice, salt, and pepper in a small bowl until combined. Adjust seasonings to taste.
  • Melt butter in a skillet over medium heat.
  • Toast the Texas toast slices until golden brown on both sides.
  • To assemble the sandwich, layer sliced chicken, Swiss cheese, bacon, tomato, and lettuce on one slice of toast.
  • Spread the lemon mayo on the other toast slice and place it on top of the sandwich.
  • Serve immediately.

Notes

Substitute Swiss cheese with cheddar or pepper jack cheese.
Serve with sweet potato fries or a crisp pickle.
