halved horizontally for 4 cutlets

fully cooked bacon

Swiss cheese

large tomato
Romaine or iceberg lettuce leaves

salted butter

cup light mayonnaise

tsp
fresh lemon juice
Salt and pepper to taste
Instructions
Combine paprika, cayenne, garlic powder, onion powder, oregano, salt, and pepper in a small bowl.
Rub the seasoning mix onto both sides of the chicken cutlets.
Heat olive oil in a cast iron skillet or griddle over medium-high heat.
Add the chicken and cook for 5–7 minutes per side, or until fully cooked. Cook in batches if necessary.
Rest the chicken for a few minutes, then slice.
Whisk mayonnaise, lemon juice, salt, and pepper in a small bowl until combined. Adjust seasonings to taste.
Melt butter in a skillet over medium heat.
Toast the Texas toast slices until golden brown on both sides.
To assemble the sandwich, layer sliced chicken, Swiss cheese, bacon, tomato, and lettuce on one slice of toast.
Spread the lemon mayo on the other toast slice and place it on top of the sandwich.
Serve immediately.
Notes
Substitute Swiss cheese with cheddar or pepper jack cheese.
Serve with sweet potato fries or a crisp pickle.
