Ingredients

  • 2 cups mixed green salad arugula, baby spinach, lettuce
  • 1 large cucumber peeled and sliced
  • 1 avocado peeled and sliced
  • ½ cup blueberries
  • ¼ cup black grapes halved
  • 2 tablespoons blue cheese diced
  • 2 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • lemon Juice of ½
  • 1 ½ tablespoons brown sugar
  • Mixed seeds for sprinkling pumpkin seeds, sunflower seeds, pine nuts
  • Salt to taste

Instructions

  • In a small bowl, mix balsamic vinegar and brown sugar.
  • In a large bowl, place lettuce and cucumber. Sprinkle with salt and drizzle with olive oil; mix gently.
  • Add the avocado and drizzle with lemon juice.
  • Top with grapes, blueberries, and seeds.
  • Drizzle 2-3 tablespoons of the balsamic glaze over the salad and add blue cheese.

Notes

Cool the glaze fully before drizzling—it thickens as it cools and won’t wilt the greens.
Serve immediately after assembling for the freshest texture.
You can prepare all the ingredients and the glaze ahead of time, then assemble just before serving.
