Buffalo Chicken Alfredo

Ingredients

  • 1 pound uncooked penne
  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 4 Tbsp unsalted butter
  • 4 ounces light cream cheese room temperature
  • 2 garlic cloves minced
  • 2 cups low-fat 2% milk
  • 2 tablespoons heavy cream
  • ¼ cup of hot sauce
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated part skim mozzarella cheese
  • Salt and black pepper to taste

Instructions

  • Cook the pasta according to package instructions and set aside.
  • Heat oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then place it in the skillet. Cook the chicken, turning it occasionally, until it is golden brown and fully cooked, approximately 8 minutes on each side.
  • Move the chicken to a cutting board and let it rest for 10 minutes before slicing.
  • Combine the sauce, chicken, and noodles.

Sauce Instructions

  • Melt butter over medium heat. Add garlic and sauté for 1 minute while stirring frequently.
  • Add the light cream cheese and garlic powder, stirring until the cream cheese is melted and mixed well with the butter.
  • Gradually add the milk and heavy cream, whisking continuously to integrate the cream cheese and prevent lumps.
  • Stir in the hot sauce, grated parmesan and mozzarella cheese until they are completely melted and the sauce is smooth.

Notes

]Ensure the cream cheese is at room temperature before melting it into the sauce. Whisk constantly when adding the milk to achieve a smooth, velvety texture.
For best results, grate your own Parmesan and mozzarella cheese instead of buying pre-grated.
For a quick fix, use jarred Alfredo sauce and jazz it up with your favorite hot sauce. This shortcut saves time while still delivering that spicy, creamy flavor.
