- 1 pound uncooked penne
- 2 large chicken breasts
- 1 tbsp olive oil
- 4 Tbsp unsalted butter
- 4 ounces light cream cheese room temperature
- 2 garlic cloves minced
- 2 cups low-fat 2% milk
- 2 tablespoons heavy cream
- ¼ cup of hot sauce
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated part skim mozzarella cheese
- Salt and black pepper to taste
Cook the pasta according to package instructions and set aside.
Heat oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then place it in the skillet. Cook the chicken, turning it occasionally, until it is golden brown and fully cooked, approximately 8 minutes on each side.
Move the chicken to a cutting board and let it rest for 10 minutes before slicing.
