Ingredients

For the crackers

  • 17 sea salt almond Nut-Thins
  • 16 cheddar almond Nut-Thins
  • 18 sea salt Good Thins

For the cheese and meat

  • 2 ounces turkey pepperoni
  • 6 ultra-thin mild cheddar slices folded in half
  • 4 Babybel Light cheeses
  • 4 Laughing Cow Light cheese wedges
  • 4 part-skim mozzarella string cheese sticks

For the fruit and veggies

  • 2 cups red grapes cut into small clusters
  • 3 clementines
  • 1 apple sliced
  • 3 celery stalks cut into sticks
  • 1 cup baby carrots
  • 1/2 cup baby kosher dill pickles

Instructions

  • Pick a large board or platter and place the Babybel cheeses, Laughing Cow wedges, string cheese, and folded cheddar slices in small groups around it.
  • Lay the crackers in rows or fanned stacks next to the cheeses, keeping each type together.
  • Shingle the turkey pepperoni in a long, overlapping line through the middle of the board.
  • Tuck the grape clusters, clementines, and apple slices into the open spaces.
  • Add the celery sticks and baby carrots, then set the pickles in a small bowl or on the edge of the board away from the crackers.
  • Serve right away with small plates so everyone can build their own snack.

Notes

Storage: Wrap leftover cheese and pepperoni and refrigerate for up to 3 days. Put the crackers back in their boxes so they stay crisp.
Bigger Crowd: Double everything for 8 people and spread it across two boards.
Leftovers: Pack any extras into lunch boxes the next day.
