Kids can’t resist building their own little plates from a board like this. It takes about 15 minutes to put together, and there’s no cooking at all, just unwrapping, slicing, and arranging. You get a little of everything in each bite: salty crackers, creamy cheese, a smoky slice of pepperoni, and something sweet and juicy from the grapes and clementines.

What You’ll Love About This Recipe

  • Light Cheeses and Turkey Pepperoni: Lighter swaps keep the classic charcuterie flavors without all the fat.
  • No Cooking: Everything comes straight from the fridge and pantry.
  • Built-In Portions: Individually wrapped cheeses and counted crackers make it easy to see how much you’re eating.
  • Lots of Produce: Half the board is fruit and veggies.
  • Great for Any Day: It works as an after-school snack, a no-cook lunch, or a movie night spread.

Ingredients

You’ll need the following ingredients to make this Healthy Charcuterie Board:

Crackers, cheeses, fruit, vegetables, and pickles for a healthy charcuterie board.

Ingredient Notes

Crackers: I use a mix of reduced-fat Wheat Thins, Blue Diamond Nut-Thins in sea salt and cheddar, and sea salt Good Thins. Different shapes and colors make the board look fuller, and each box lists its own serving size so you can count out a portion.

Turkey Pepperoni: I like Applegate Naturals Uncured Turkey Pepperoni. It’s made without antibiotics or added hormones, it’s gluten free, and 17 slices have just 80 calories and 4 grams of fat.

Light Cheeses: Babybel Light and Laughing Cow Light wedges come individually wrapped, which makes them easy to grab and portion. I add part-skim mozzarella string cheese and ultra-thin cheddar slices for more variety.

Fruit: Clementines peel in seconds, and grapes look best cut into small clusters so they’re easy to grab.

Pickles: Baby kosher dill pickles add a salty crunch that balances the sweet fruit.

Recipe Variations

More Veggies: Add 1 cup broccoli florets, snap peas, or sliced bell peppers.

Turkey Roll-Ups: Roll 4 ounces of lean deli turkey into tubes and tuck them next to the pepperoni.

Something Crunchy: Add 2 cups air-popped popcorn or a handful of veggie straws in place of one type of cracker.

Add a Dip: Set out a bowl of my Peanut Butter Greek Yogurt Dip for the apples or ½ cup hummus for the veggies.

Lunch Box Version: Divide everything into 4 bento-style containers for grab-and-go lunches.

Recipe Tips and Tricks

Start with the biggest items and work down to the smallest. The cheeses and cracker rows set up the layout, and the grapes and carrots fill in the gaps.

Keep wet foods like pickles and cut apples away from the crackers, or put them in a small bowl. The juice makes crackers soggy fast.

Toss the apple slices in a squeeze of lemon juice. It keeps them from browning while the board sits out.

Overlap items so no board shows through. A full, layered board looks more generous even with modest portions.

Frequently Asked Questions

Can I make it ahead of time?

Yes, up to 4 hours ahead. I arrange the cheese, pepperoni, fruit, and veggies, cover the board with plastic wrap, and keep it in the fridge. The crackers go on right before serving so they stay crisp.

How do I make it work for Weight Watchers?

I don't list points because the WW program changes over time. I scan each package in the WW app and count out my portions, and the fruit and veggies make it easy to fill up. For another WW-friendly recipe, try my Weight Watchers Banana Pancakes.

What size board should I use?

A 14- to 16-inch board or platter is just right for 4 people. For a bigger group, use two boards instead of piling everything higher.
