High Protein Skillet Lasagna (lazy lasagna)

This easy Skillet Lasagna delivers all the rich, cheesy goodness of traditional lasagna without the hassle! This dish is made in just one pan and combines tender pasta, flavorful marinara, and three delicious kinds of cheese for a comforting meal perfect for busy nights.

Ingredients

  • 1 lb ground beef
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp Italian seasoning
  • 1 medium yellow onion minced
  • 2 tbsp garlic minced
  • 24 oz marinara sauce
  • 1 ½ cups water
  • 8 uncooked lasagna noodles broken into bite-sized pieces
  • 1 cup ricotta cheese
  • ½ cup Parmesan cheese shredded
  • ½ cup mozzarella cheese shredded
  • 2 tbsp fresh basil chopped

Instructions

  • Heat a large cast iron or stainless steel skillet over medium-high heat. Add ground beef and break apart. Season with Italian seasoning, salt, and pepper. Cook until browned, about 7 to 10 minutes.
  • Add onions and garlic, and cook until the onions are softened.
  • Stir in marinara sauce and water. Bring to a low simmer and add lasagna noodles. Mix to submerge the noodles.
  • Cover and continue simmering on low for 20 to 25 minutes, or until the noodles are cooked.
  • Mix in Parmesan and mozzarella cheeses. Dollop the ricotta cheese on top.
  • Cover and simmer for an additional 2 minutes, until the cheese is warmed.
  • Garnish with chopped basil and enjoy!

Notes

Use a deep skillet to prevent overflow while simmering.
Don’t overcook the noodles—check for doneness around 20 minutes.
Sub the ricotta cheese with cottage cheese for an extra protein boost.
