Ingredients

  • cup panko breadcrumbs
  • 1 ½ lb salmon
  • ½ Juice of lemon
  • 2 tbsp unsalted butter - melted
  • 2 tbsp grated Parmesan cheese
  • 2 tsp Italian seasoning
  • ¼ cup mayonnaise
  • 1 tbsp olive oil
  • ½ tsp black pepper
  • ½ tsp salt
  • 1 tbsp fresh parsley - chopped

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with aluminum foil and lightly coat it with oil.
  • In a small bowl, combine the panko, Parmesan, Italian seasoning, salt, pepper, lemon juice, and melted butter, stirring until evenly mixed.
  • Place the salmon on the prepared baking sheet (skin-side down if applicable). Spread the mayonnaise evenly over the top.
  • Press the panko mixture onto the salmon, gently pressing to ensure it adheres.
  • Bake for 10 to 12 minutes, or until the salmon is fully cooked and flakes easily with a fork.
  • For a crispier, golden topping, broil for 30 seconds to 1 minute, watching closely to prevent burning.
