Instructions
Preheat the oven to 400°F. Line a baking sheet with aluminum foil and lightly coat it with oil.
In a small bowl, combine the panko, Parmesan, Italian seasoning, salt, pepper, lemon juice, and melted butter, stirring until evenly mixed.
Place the salmon on the prepared baking sheet (skin-side down if applicable). Spread the mayonnaise evenly over the top.
Press the panko mixture onto the salmon, gently pressing to ensure it adheres.
Bake for 10 to 12 minutes, or until the salmon is fully cooked and flakes easily with a fork.
For a crispier, golden topping, broil for 30 seconds to 1 minute, watching closely to prevent burning.
Remove from the oven, garnish with chopped parsley, and serve immediately.
