Sausage Breakfast Sandwich

These sausage breakfast sandwiches are quick to whip up and loaded with egg, cheese, and sausage, they're the ultimate grab-and-go breakfast.

Ingredients

  • 1 cup buttermilk Kodiak Pancake mix
  • 8 eggs
  • 3/4 cup water
  • 1/2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp oregano
  • 1/4 cup cheddar cheese shredded
  • 1/2 lb. ground sausage
  • 1 handful chopped parsley optional

Instructions

  • . Preheat the oven to 350 degrees and grease a muffin tin.
  • In a medium bowl, combine the kodiak mix, 1 egg, 1⁄4 teaspoon pepper, 1⁄2 teaspoon, onion powder, and 1⁄2 teaspoon garlic powder, onion powder, and 1⁄2 teaspoon garlic powder.
  • Divide the mixture evenly between 6 of the muffin cups. Bake for 12-15 minutes.
  • Meanwhile, prepare the eggs by cracking all remaining 7 eggs into a medium sized bowl.
  • Remove 5 of the yolks with a spoon. Add in 1⁄4 teaspoon pepper, 1⁄2 teaspoon onion powder, 1⁄2 teaspoon garlic powder, and salt, oregano, and cheese and whisk together.
  • Grease a 9 x 9 pan and pour the egg mixture in.
  • Once the muffins are done, heat the oven to 400 degrees and cook the eggs for about 10-15 minutes.
  • While the eggs cook, prepare the sausage. Heat a skillet over medium heat. Divide the meat into 6 even balls and smoosh into patties. Cook until browned on both sides, about 5 min.
  • Cut the muffin tops off to make them into sandwiches.
  • Cut the eggs into 6 squares.
  • Assemble the sandwiches by placing the sausage patty and egg square onto the muffin.
  • Optionally, you can top the eggs with a bit of parsley. Place the muffin top on and enjoy!

Notes

Cook a big batch of sausage patties and pancakes on the weekend. Store them in the fridge or freezer for quick assembly during the week.
Feel free to experiment with different cheeses, sauces, and veggies. Avocado, salsa, and hot sauce are great for adding extra flavor without much effort.
Use a scoop or measuring cup to pour pancake batter, ensuring uniform size and easier sandwich assembly.
