Ingredients

Shrimp Ingredients:

  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime

Rice Bowl Base:

  • 2 cups cooked rice

Toppings:

  • 1/2 cup black beans rinsed
  • 1/2 cup cooked corn fresh, frozen, or canned
  • 1 avocado sliced
  • 1 cup shredded purple cabbage
  • 1 cup cherry tomatoes halved
  • 1/4 cup thinly sliced red onions
  • 1/4 cup chopped fresh cilantro
  • Fresh lime wedges

Instructions

  • Combine shrimp, olive oil, and all spices in a bowl. Add lime juice and toss to coat.
  • Heat a skillet over medium-high. Cook shrimp for 2-3 minutes per side until done. Set aside.
  • Layer rice with shrimp, beans, corn, cabbage, tomatoes, avocado, onions, and cilantro. 5. Top with lime wedges. Serve immediately.
