Shrimp Ingredients:
- 1 lb shrimp peeled and deveined
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
Toppings:
- 1/2 cup black beans rinsed
- 1/2 cup cooked corn fresh, frozen, or canned
- 1 avocado sliced
- 1 cup shredded purple cabbage
- 1 cup cherry tomatoes halved
- 1/4 cup thinly sliced red onions
- 1/4 cup chopped fresh cilantro
- Fresh lime wedges
Combine shrimp, olive oil, and all spices in a bowl. Add lime juice and toss to coat.
Heat a skillet over medium-high. Cook shrimp for 2-3 minutes per side until done. Set aside.
