Jump to Recipe

This Cheesy Crockpot Salsa Chicken is chicken breasts slow cooked in salsa until they’re fork-tender, then covered with melted Monterey Jack, so you get enchilada flavor without rolling a single tortilla. The whole sauce is one jar of store-bought salsa, and shortcuts like that are how dinner happens on my busy weeks.

Prep takes about 5 minutes in the morning: salt the chicken, pour on the salsa, and walk away. By dinner the salsa has cooked down into a tangy sauce that’s great spooned over rice, and this slow cooker salsa chicken reheats well for anyone who eats late.

What You’ll Love About This Salsa Chicken

  • One Pot, No Precooking: Raw chicken goes straight into the slow cooker, so there’s no browning step and only one pot to wash.
  • Over 50 Grams of Protein: Each serving is a whole chicken breast, so one plate covers a big share of your protein for the day.
  • Made With Lean Chicken: Boneless, skinless breasts and a light layer of cheese keep it on the lighter side.
  • Works for Meal Prep: Portion it over rice in four containers and lunches are covered for most of the week.
  • You Pick the Heat: Use mild salsa for the kids or hot salsa if your crew likes a kick.

Ingredient Notes

Salsa: The salsa is the whole sauce, so use a jar you’d happily eat with chips. My pick is Green Mountain Gringo. It’s made without preservatives and comes in mild, medium, and hot.

Chicken Breasts: I use four breasts that weigh about 2 pounds total. Some packs have breasts closer to 12 ounces each, and those I cut in half so everything cooks in the same time.

Monterey Jack: It melts smooth and stays mild, so the salsa flavor comes through. Pepper jack adds a little heat, and cheddar works if that’s what’s in your fridge. A bag of pre-shredded cheese is fine here.

Chicken Broth: You only need it with a thick, chunky salsa. A few tablespoons keeps the bottom of the pot from scorching before the chicken starts releasing its juices. I buy low-sodium broth so it doesn’t add extra salt.

Salsa Chicken Variations

Make It Spicy: Stir 1 diced jalapeño into the salsa before cooking, or add ½ teaspoon chipotle powder with the salt.

Add Beans and Corn: Add one 15-ounce can of black or pinto beans (drained and rinsed) and 1 cup of frozen corn around the chicken at the start. Cook time stays the same.

Add Taco Seasoning: For a more Mexican-style flavor, sprinkle 1 tablespoon of taco seasoning (or 1 teaspoon each of chili powder and cumin) over the chicken along with the salt.

Use Salsa Verde: Swap the red salsa for the same amount of green salsa verde for a brighter version made with tomatillos.

Shred It for Tacos: Once the chicken is cooked, shred it in the pot with two forks and stir it into the sauce before sprinkling on the cheese. Spoon the shredded chicken into tortillas for tacos or burritos, pile it on nachos, or tuck it into quesadillas.

Crockpot Salsa Chicken With Cream Cheese

Cream cheese is the easiest way to turn the salsa into a creamy sauce. During the last 30 minutes, stir 4 ounces of softened light cream cheese into the salsa around the chicken until it melts in, then add the Monterey Jack on top and finish cooking.

The sauce turns a pale orange and clings to rice much better than plain salsa. I use light cream cheese here because the Monterey Jack already brings plenty of richness.

Recipe Tips and Tricks

Keep the chicken in one layer. Stacked breasts cook unevenly, and the top ones dry out before the bottom ones are done. A 6-quart oval slow cooker fits four breasts side by side.

Start checking at 4 hours. Crockpot salsa chicken cook time depends on how thick your breasts are and how hot your slow cooker runs. Pull it once the thickest part reads 165°F, since breast meat turns dry if it sits on low much longer.

Salt the chicken, not the salsa. Sprinkling the salt right on the meat seasons the chicken itself instead of just the sauce around it.

Add the cheese at the end. Cheese added at the start turns greasy and sinks into the sauce over 4 hours of cooking.

Keep the lid closed. Every peek lets out heat and can add 15–20 minutes to the cook time.

What to Serve With Salsa Chicken

I serve it the way it’s shown in the photos: over rice with a simple salad of lettuce, tomatoes, and cucumber. Plain white rice, cauliflower rice, or my coconut cilantro lime rice all work. The extra salsa from the pot works as a sauce for the rice.

You can also turn it into burrito bowls, the same way I build my instant pot burrito bowls: slice the chicken over rice with black beans, avocado, cilantro, and a squeeze of lime. Warm tortillas on the side let everyone wrap up their chicken taco-style.

Frequently Asked Questions

Can I put raw or frozen chicken in the slow cooker?

Raw, yes. Raw chicken goes straight into the pot and cooks in the salsa. Frozen, no. A frozen breast takes too long to warm up past the food-safety danger zone in a slow cooker, and the melting ice waters down the salsa. I move mine from the freezer to the fridge the night before.

Can I use chicken thighs instead of breasts?

Yes, and they're harder to overcook. Use about 2 pounds of boneless, skinless thighs and cook them on low for the full 6 hours. They stay juicier than breasts, but they do add a little more fat, so I stick with breasts most of the time.

Can I make salsa chicken with just 3 ingredients?

Yes. Chicken, salsa, and cheese are the only must-haves. The salt seasons the meat and the green onion is a garnish, so if you skip the salt, pick a salsa that tastes well seasoned on its own.

Prep Time: 5 minutes
Cook Time: 4 hours 15 minutes
Total Time: 4 hours 20 minutes
Servings: 4 servings

Ingredients

For the chicken

  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 3/4 teaspoon salt
  • 1 1/2 cups salsa (mild, medium, or hot)
  • 3 tablespoons chicken broth (only if your salsa is thick and chunky)

For topping

  • 1/3 cup shredded Monterey Jack cheese
  • 1 tablespoon chopped green onion

Instructions

  • Lay the chicken breasts in a single layer in the bottom of a 6-quart slow cooker. Season the tops with the ¾ teaspoon salt.
  • Spoon the 1½ cups salsa over the chicken so every piece is covered. If the salsa is thick and chunky, add the 3 tablespoons chicken broth around the edges of the pot.
  • Cover and cook on LOW for 4–6 hours, until the chicken is fork-tender and the thickest part reads 165°F.
  • Scatter the ⅓ cup Monterey Jack over the chicken. Cover again and cook 15–30 more minutes, until the cheese has melted.
  • Top with the 1 tablespoon green onion. Serve each breast with a spoonful of the salsa from the pot, over rice if you like.

Notes

High Setting: To cook on HIGH, cook 2½–3 hours before adding the cheese.
Storage: Keep leftovers in an airtight container for up to 3 days in the refrigerator.
Reheating: Reheat in the microwave, covered, with a spoonful of the sauce on top so the chicken doesn't dry out, about 1–2 minutes.
Freezing: Cool the cooked chicken in its sauce and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
