Chocolate Peanut Butter Cottage Cheese Pudding (High Protein)

Jump to Recipe

Chocolate Peanut Butter Cottage Cheese Pudding is a thick, rich chocolate pudding made by blending cottage cheese with peanut butter protein powder, cocoa, and a little vanilla until completely smooth. If you love a Reese’s cup, this is a high-protein snack or dessert with that same chocolate and peanut butter flavor.

I blend a batch on Sunday night and portion it into little jars for the week. It takes about 5 minutes in the blender, and 30 minutes in the fridge makes it even thicker and more like real pudding. The cottage cheese turns completely smooth, so it tastes like a light chocolate cheesecake filling instead of anything cheesy.

Ingredient Notes

Cottage Cheese: I like Good Culture cottage cheese. It’s made with just organic milk, cream, sea salt, and live and active cultures, with no gums, and it comes from pasture-raised cows. Low-fat or full-fat both work, and full-fat gives a richer pudding.

Protein Powder: Peanut butter flavored protein powder gives the strongest peanut butter taste, but chocolate or vanilla works too. Whey blends the smoothest, while plant-based powders can make it a little thicker.

Cocoa Powder: Use unsweetened cocoa powder. Dutch-process cocoa gives a darker, more mellow chocolate flavor if you have it.

Sweetener: I use powdered erythritol because it dissolves without any grit. Start with less if your protein powder is already sweet, then taste and add more.

Almond Milk: Add it a tablespoon at a time. Different protein powders absorb different amounts of liquid.

Recipe Variations

Peanut Butter Swirl: Swirl 1 tablespoon natural peanut butter into each serving before chilling.

Mocha Pudding: Blend in 1 teaspoon instant espresso powder with the cocoa.

Chocolate Banana: Add ½ ripe banana to the blender and skip some of the sweetener.

Raspberries and Whipped Cream: Top each cup with a spoonful of light whipped cream, a few fresh raspberries, and a little shaved dark chocolate, like in the photos.

Crunchy Topping: Sprinkle each cup with 1 teaspoon cacao nibs or chopped peanuts right before eating.

Recipe Tips and Tricks

Blend longer than you think you need to. It takes a full 1 to 2 minutes for the cottage cheese curds to break down completely.

Use a high-speed blender or a food processor. A small personal blender works, but you’ll need to stop and scrape more often.

Let the pudding chill before judging the thickness. It firms up quite a bit in the fridge, so it’s fine if it looks a little loose right out of the blender.

Add a pinch of salt. It brings out the chocolate and peanut butter flavors.

Frequently Asked Questions

Can you taste the cottage cheese?

Not once it's blended smooth. The cocoa and peanut butter cover it up completely.

Will Greek yogurt work in place of cottage cheese?

You can, but I prefer cottage cheese here. Greek yogurt makes it tangier and a little thinner.

Do you have a dairy-free pudding?

My Blueberry Lemon Chia Pudding is made with coconut milk and is naturally dairy-free.

Prep Time: 5 minutes
Chill: 30 minutes
Total Time: 35 minutes
Servings: 4 servings

Ingredients

For the pudding

  • 2 cups cottage cheese (low-fat or full-fat)
  • 2 scoops peanut butter protein powder
  • 3 tablespoons unsweetened cocoa powder
  • 1 1/2 tablespoons powdered erythritol (stevia works too)
  • 1 teaspoon vanilla extract
  • 2 to 4 tablespoons unsweetened almond milk
  • Pinch of salt (optional)

Instructions

  • Put the cottage cheese, protein powder, cocoa powder, sweetener, vanilla, 2 tablespoons almond milk, and the salt, if using, in a high-speed blender.
  • Blend on high for 1 to 2 minutes, stopping to scrape the sides, until no curds remain.
  • Taste the pudding. Add more sweetener if you like, and blend in more almond milk 1 tablespoon at a time if it's too thick.
  • Spoon the pudding into 4 small cups or jars.
  • Refrigerate for 30 minutes to firm up, or serve right away for a softer pudding.

Notes

Chilling: The 30-minute chill is optional but gives it a thicker, more pudding-like texture.
Storage: Cover the cups and keep them in the fridge for up to 3 days.
Freezing: I wouldn't freeze it. Cottage cheese turns grainy once it thaws.
