Quick and Easy Low Carb Crustless Quiche

I just love the versatility of egg dishes. This recipe is special enough for Christmas morning but is also perfect for a quick weekday meal prep. Seriously, this recipe is so quick and easy that you can have it on the table in no time! There are not many dishes that are perfect for breakfast, lunch, or dinner but this is definitely one of them! For meal prep you can just make this on  the weekend and then reheat for a breakfast.

I  am pretty much obsessed with chicken sausage and goat cheese so I always have them on hand. They are a great combo! If chicken sausage or goat cheese are not your thing feel free to replace them with any other meat or cheese combo. Same goes for the spinach/veggies. Throw in whatever veggies you have on hand. This would be really good with red bell peppers, brussels, broccoli, ground  turkey, or even bacon. Use your imagination! If you are Whole 30 or paleo simply omit the cheese and cream and it will still be delicious!

This recipe only uses on 5 ingredients (not counting the salt and pepper)! You can’t beat that guys!  For the chicken sausage I personally love Aldi’s brand. Applegate Farms is another great option. Watch for brands with added nitrates or artificial ingredients and avoid them like the plague!

Baby spinach is a great vegetable to add to dishes. If your a mom like me, you can probably relate to wanting to get ALL the greens into your kids food. Baby spinach is perfect because is very nutritious and does not have a strong taste at all. You really cant even taste it. My kids still like to point out when I try to sneak greens into things but they can’t complain when you can’t even taste it!

Spinach is packed with tons of vitamin and minerals including Vitamin K, Vitamin A, folate, and more! Pro Tip: If your bag of baby spinach is starting to wilt and go bad you and can just throw it in the freezer to sneak into your smoothies! Can’t even taste it!

Ingredients

  • 6 eggs
  • 3/4 cup crumbled goat cheese
  • 1/4 cup heavy cream
  • 2 large chicken sausage links sliced
  • 1 cup baby spinach
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon sea salt

Instructions

  • Preheat oven to 375. Spray a pie dish with non stick spray.
  • Whisk eggs together in a mixing bowl and then add the rest of ingredients and mix well.
  • Add mixture to pie pan and cook in preheated oven for 20-25 minutes or until egg mixture is set in the center and brown and bubbly.
