Keto Berry Parfaits

Following a keto or low carb lifestyle can be challenging during  the summer months. These keto berry parfaits are the perfect low carb dessert for all your summer picnics and BBQS.

These are a great option to bring with you so you know that you will be able to enjoy dessert and still stay on track.  They are super easy to throw together and are delicious as well as adorable.

Can you eat berries on the keto diet?

Most fruit are high in carbs and not typically part of ketogenic lifestyle. 

Raspberries, strawberries, blackberries, and blueberries are the lower carb fruits and most people following a keto or low carb lifestyle enjoy these in moderation!

How do you make a keto berry parfait? 

These keto berry parfaits are made from only a few simple ingredients!

  1. Keto Pound Cake – I use this keto pound cake recipe from ruled.me. 
  2. Fresh Strawberries 
  3. Fresh Blueberries 
  4. Whipped Topping – You can use store-bought whipped topping but it is SO easy to make your own. Make sure you add Swerve Confectioners to sweeten it up. I get mine on Amazon and use it ALL the time. 

To assemble the parfaits you will need clear cups or glasses. I found these 9 oz cups at Walmart and I loved the idea of using disposable so you can bring them to a picnic and throw them out after. 

Stemless wine glasses or even mason jars would work great as well if you are serving these at home.

These keto berry parfaits are made with strawberries, blueberries, pound cake, and whipped topping. The perfect summer treat for 4th of July or Memorial Day.

  • Beat heavy cream, vanilla, and confectioners swerve with an electric mixer until soft peaks form.
  • Layer the pound cake, strawberries, and blueberries in clear cups or glasses.
  • Top with whipped cream.
